CARROTS WITH EVERYTHING

While many foods were scarce, carrots were one vegetable that was in plentiful supply. So abundant, in fact, that it was often enlisted as a substitute for other ingredients, such as the toffee carrot pictured opposite, or in potato and carrot pancakes, for instance. The government encouraged carrot consumption by suggesting that the RAF’s success at night-time raids was down to its pilots eating highcarotene carrots. The result was that people ate more, thinking they’d see better in the blackout.
